Farm‑level apricot drying emphasizes hygienic handling, rapid moisture removal, and colour preservation through simple but well‑structured practices. Fresh apricots are harvested at optimal maturity, washed, and halved to expose the flesh for faster drying. Farmers commonly use raised drying racks or mesh trays, which improve airflow and prevent contact with soil, dust, and insects. In many regions, apricots are sulphured in small chambers to maintain bright colour and reduce microbial load, followed by controlled sun drying under protective covers that shield the fruit from rain, birds, and debris. Regular turning ensures uniform drying, while sorting and grading after drying improve market value. This Turkish approach—clean handling, elevated drying surfaces, protective covers, and optional sulphuring—significantly enhances product quality and reduces postharvest losses at the farm level.
